    The Best Costco Chicken Skewers Recipe Copycat

    This Costco Chicken Skewers recipe is easy to make and taste delicious. These homemade Mediterranean-style grilled chicken skewers are full of bright flavors and great for lunch, a snack, or dinner!

    One of my favorite Costco finds is their Chicken Kabobs. They're low calorie, low carb, low fat, and have a lot of delicious flavors. 

    You can find these Costco Chicken Skewers in the refrigerated section of the deli at your local Costco. 

    They're perfect for meal prepping, weight loss, and quick weeknight dinners.

    Why Should I Soak My Wooden Skewers?

    Before cooking, be sure to soak your wooden skewers for around 30 minutes. This is so that they don't burn while they're on the grill. There are also stainless steel skewers that you can use for your Costco Chicken Skewers.

    Ingredients for the Costco Chicken Skewers Recipe

    Chicken Breast: I like to use boneless, skinless chicken breasts, but you can also use thighs. I've used this recipe with steak pieces too.

    Olive Oil: helps your seasonings and dried herbs stick to your chicken pieces better.

    Lemon: brings a bright, citrusy, acidic flavor to this recipe. It also helps with breaking down the protein in the chicken to make it more tender. 

    Salt: enhances the delicious flavors.

    Garlic and Onion Powder: add both savory and pungent flavors.

    Dried Herbs: basil and rosemary add both a minty and piney taste to your chicken marinade.

    Black Pepper: gives your recipe a bit of an earthy and spicy flavor.

    How to Make this Costco Chicken Skewers Recipe

    1. In a large mixing bowl, combine the olive oil, lemon juice, salt, garlic powder, onion powder, dried basil, dried rosemary, and black pepper. Mix well to create the marinade.
    2. Add the chicken breast cubes to the marinade and toss to coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the chicken to marinate. You can marinate it for up to a few hours for a stronger flavor.
    3. While the chicken is marinating, soak the wooden skewers in water to prevent them from burning while you grill your chicken. 
    4. Preheat your grill to medium-high heat or prepare a grill pan on your stovetop.
    5. Thread the marinated chicken cubes onto the soaked wooden skewers carefully.
    6. Grill the chicken skewers for about 5-7 minutes per side or until they are fully cooked and have nice grill marks. The internal temperature of the chicken should reach 165°F. Remove the chicken skewers from the heat and allow them to cool down for a few minutes. 
    7. Serve your chicken skewers with your favorite dipping sauce, a side salad, or some grilled vegetables.

    Flavor Variations of the Costco Chicken Skewers Recipe

    Sweet: add pineapple slices in between your chicken to add a sweetness to this dish. Go a step further and drizzle some teriyaki sauce on top once they're done cooking for a delicious, sweet, and savory flavor. 

    Spicy: add red pepper flakes either to your marinade or on top of your chicken while it is on the grill for a bit of spice.

    Colorful: add plenty of veggies in between your pieces of chicken. I like to add different colored peppers and onions, or you can add squash, zucchini, or tomatoes.

    Can I Cook the Chicken Kabobs in the Oven?

    Good news - you can still enjoy these Costco chicken skewers on rainy days or if you don't have a grill.

    To cook them in the oven, preheat your oven to 425 degrees F. Place your skewers on a cookie sheet that is lined with aluminum foil. Pop them in the oven for about 10 minutes and then flip for another 10 minutes.

    Before you turn your oven off, be sure to check the internal temperature of your Costco Chicken Skewers to see if they're done cooking. If they've hit 165 degrees or higher, they're ready to go!

    Pro Tip: spray your foil with cooking spray so the chicken doesn't stick!

    What Can I Serve with My Costco Chicken Skewers? 

    There are so many options when it comes to adding a side to your kabobs. You can throw some veggies on the grill with your chicken for a side dish. You can also serve them with potatoes or baked beans. 

    If you're looking for a cold side dish, try adding a side of potato salad, a small caesar salad, or a Mediterranean pasta side.

    I like to add mine on top of a bed of rice or plain quinoa with a veggie, like grilled peppers and onions.

    How do I store Costco Chicken Skewers?

    This recipe is one of my favorites because it is so simple to store, and they're great for meal prep. After taking these skewers off the grill, place them on a cooling rack or plate and let them cook until room temperature before placing them in the fridge.

    To store, place them into an airtight container or Ziploc bag or wrap them up in plastic wrap for up to three or four days. You can also pop them in the freezer for up to three months.
