    • Marinara Sauce: is the base of the pasta dish. You can use freshly homemade, jarred, or canned.

    1. Boil the penne pasta to al dente according to package directions. Drain and set aside. Make sure to reserve 1/3 cup of pasta water aside.
    2. In a medium bowl, mix together the ricotta cheese, parmesan cheese, mozzarella cheese, and Romano cheese with the egg and basil and set aside.

    1. Into a large skillet or pot, add the olive oil and heat it up on medium-low heat. Once the oil is hot enough, cook the shallots for a minute or two until fragrant and translucent, then add in the chopped garlic and cook for another minute.
    2. Add the marinara sauce on top of the shallot garlic mixture, season with salt and pepper to taste, and cook together for 4-6 minutes or until warmed thoroughly.

    1. Drop spoonfuls of the ricotta mixture into the sauce and stir gently as everything is cooking. Cook for 7-10 minutes or until everything is combined and melty. Make sure to stir from time to time.

    1. Mix in the drained pasta. Add in that cup of the pasta water if the cheese sauce seems a little dry, and continue mixing to combine everything together.
