    1. Set the Instant Pot to the Saute function. Add a little olive oil, then sauté the diced onion. Stir in the minced garlic and continue to cook.
    2. In a small bowl, combine cumin, oregano, chili powder, salt, and pepper. Rub this spice mix evenly over the chicken.
    3. Place the seasoned chicken in the pot and sear both sides until browned. Pour in the chicken broth, bay leaf, orange juice, lime juice, apple cider vinegar, adobo sauce, and the chopped chipotle peppers.
    4. Seal the lid and set Instant Pot to the “Manual” or “Pressure Cook” option, setting it to high pressure for 15 minutes. After cooking, let the natural pressure release happen for 10 minutes, then perform a quick release of the pressure for the remainder.

    Ingredients
     
     

    • 2 lbs chicken breast 900g boneless, skinless chicken thighs (or breasts)
    • 2 tablespoon olive oil
    • 1 large onion diced
    • 7 cloves garlic minced
    • 1/2 tablespoon ground cumin
    • 2 teaspoon chili powder
    • 2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 chipotle pepper the ones in adobo sauce, roughly chopped
    • 1 tablespoon adobo sauce the sauce from the chipotle peppers
    • 1/4 cup orange juice about one medium orange juiced
    • 1/4 cup lime juice about 2 limes juiced
    • 1/4 cup chicken broth
    • 1 tablespoon apple cider vinegar
    • 2 bay leaves

    • Set Instant Pot to “Sauté” mode. Heat olive oil and cook chopped onion for 2-3 minutes. Add garlic and cook for 30 seconds.

Pour in chicken broth, orange juice, lime juice, apple cider vinegar, bay leaves, adobo sauce, and the chopped up adobo pepper. Close the lid, set to “Manual” or “Pressure Cook” on high for 15 minutes. Let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
