- 1 large onion diced
- 5 garlic cloves minced
- 1/4 cup lime juice about 2-3 limes
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 3 bay leaves
- 1/2 tbsp ground cumin
- 1 tbsp dried oregano
- 1/4 tsp ground cloves
- 1 tsp black pepper
- 1-2 tsp salt to taste, start with less then taste when the meat is cooked and adjust
- 2 tbsp vegetable oil for browning
- Fresh cilantro chopped (optional for serving)
