    • 1 loaf black pepper focaccia regular focaccia or 4 focaccia sandwich squares
    • 2 cups shredded rotisserie chicken about 1 breast + 1 thigh

    Seasoning for chicken:

    • 1 tsp smoked paprika
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • Pinch of salt & black pepper
    • 8 oz fresh mozzarella sliced

    Vegetables & herbs:

    • 2 Roma tomatoes thinly sliced
    • ½ medium red onion thinly sliced
    • ½ cup fresh basil leaves torn

    • ½ cup mayonnaise Duke’s or similar
    • 1 chipotle pepper in adobo finely minced
