  • 2.5 lbs russet potatoes peeled and cubed
  • 1/2 cup unsalted butter
  • 1/4 cup sour cream add more for creaminess
  • 1/2 cup heavy cream
  • 1 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or black pepper

Instructions
 

  • Place the cubed potatoes in a large pot and cover with cold water. Add a few teaspoons of salt in there.
    2.5 lbs russet potatoes
  • Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are fork-tender, about 15-20 minutes.
  • While the potatoes cook, heat the butter and heavy cream in a pot on low heat to gently warm them up.

  • Drain the potatoes and return them to the pot. Let them sit for 1-2 minutes to release excess steam.
  • Mash the potatoes with a potato masher or ricer.
  • Mix in butter, sour cream, heavy cream, salt, and white pepper. Stir until smooth and creamy. Adjust seasoning to taste.
