Preheat your oven to 425°F, then line a large baking sheet with parchment paper and set aside.
Cut the potatoes into fries and place them in a large bowl. Drizzle with olive oil and toss until the fries are evenly coated.
5 large russet potatoes, 3 tablespoons olive oil
In a small bowl, mix together garlic powder, onion powder, smoked paprika, cayenne pepper, dried oregano, salt, and pepper. This will be the cajun seasoning that we will season our fries with.
1 teaspoon garlic powder, 1/2 teaspoon onion powder, 3/4 teaspoon smoked paprika, 1 teaspoon cayenne pepper, 1 teaspoon dried oregano, Salt and pepper to taste
Sprinkle half the seasoning mix over the fries, ensuring they are evenly coated. Toss the fries again to distribute the seasoning. Keep a small amount of seasoning to top your cheese with if desired.
Spread the seasoned fries on a baking sheet in a single layer, making sure they are not crowded. Crowding can lead to uneven cooking. Bake in the preheated oven for 25-30 minutes or until the fries are golden brown and crispy. Make sure to shake them halfway through for even baking.
You can alternatively air fry your fries, or fry them in an actual deep frier. This will all depend on your personal preference.
Make the cheese sauce while the fries are in the oven
In a saucepan over medium heat melt the butter, then add in the flour, salt, and cayenne pepper and stir to combine.
2 tablespoons butter, 2 tablespoons all purpose flour, 1/4 teaspoon cayenne pepper, 1/2 teaspoon salt
Slowly add in the milk while stirring constantly. Keep adding the milk in and stirring until no lumps appear in the sauce and it slowly starts to thicken.
2 cup milk
Remove from the heat and add in the shredded cheese and stir until the cheese in melted and combined with the sauce.
1 & 1/2 cup white cheddar
Sprinkle the fried with the leftover fry seasoning, then serve with a generous drizzle of your favorite ranch and the cheese sauce. Top with herbs like parsley or chives and enjoy!
