Cook the turkey bacon in a skillet until crispy. You can let the bacon cook as you are preparing your egg patties.
2 slices turkey bacon
Preheat a non-stick mini skillet over medium heat and spray with cooking spray.
In a bowl, whisk the egg whites and season with salt and pepper.
6 egg whites, Salt and pepper
Pour half of the egg whites into the skillet and cook with the lid on until it sets and you can flip that egg patty. Flip using a rubber spatula to cook both sides evenly. Remove from the heat and top each patty with a slice of white cheddar cheese.
2 slices white cheddar cheese, Cooking spray
Toast the bread slices until lightly browned.
2 whole grain english muffins
Assemble the sandwiches by placing the warm egg white patty on top of the bottom slice of bread then topping it with one piece of turkey bacon broken in half to fit the size of the English muffin then the other slice of bread.
