In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the beaten eggs, with a little salt and pepper, and cook until set, stirring occasionally. Remove the eggs from the pan and set aside.

In the same pan, add the garlic, ginger, onion, peas, and carrots. Cook for 2-3 minutes, or until the vegetables are tender. Feel free to add an extra tablespoon of oil to cook your vegetables if the egg absorbed all the oil. Add the frozen peas and continue to cook for another minute or so.

Add the chilled rice to the pan and stir to combine with the vegetables. Cook for a few minutes, stirring occasionally, until the rice is heated through.
Add the diced scallions and cooked chicken breast to the pan and stir to combine.

In a small bowl, mix together the soy sauce, sesame oil, and molasses. Pour the sauce over the rice and stir to coat. Add the cooked eggs back to the pan and stir to combine. Cook for an additional minute or so, until everything is heated through and well combined.
3 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp molasses
