Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the minced garlic and sliced green onions to the skillet and sauté for about 1 minute until fragrant. Move that to the side and add in the beaten eggs. Allow them to cook for a few seconds until they set a little bit.
Using a spatula, scramble the eggs and mix them with the garlic and green onions. Transfer the egg mixture to a bowl and set aside. Add the peas and carrot mix into the pan or wok and stir-fry for 2-3 minutes.
Add the cooked white rice to the skillet and break up any clumps using a spatula. Stir-fry for about 3-4 minutes to incorporate all the ingredients evenly.
Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice. Toss everything together to coat the rice and vegetables with the sauces. Continue stir-frying for another 2-3 minutes. Add in the scrambled eggs and mix again.
Season with salt and pepper to taste.
Once the fried rice is heated through and well combined, remove it from the heat.
Serve the Panda Express-style fried rice hot as a side dish or as a main course with your favorite Asian-inspired dishes.
