Panda Express Fried Rice Recipe (Easy Copycat in 20 Minutes)

Ingredients
  

  • 3 cups cooked white rice preferably cooled or day-old rice
  • 2 tablespoons vegetable oil
  • 2/3 cup frozen peas and carrots frozen
  • 2-3 green onions thinly sliced
  • 2 cloves garlic minced
  • 2 eggs lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and sliced green onions to the skillet and sauté for about 1 minute until fragrant. Move that to the side and add in the beaten eggs. Allow them to cook for a few seconds until they set a little bit.
  • Using a spatula, scramble the eggs and mix them with the garlic and green onions. Transfer the egg mixture to a bowl and set aside. Add the peas and carrot mix into the pan or wok and stir-fry for 2-3 minutes.
  • Add the cooked white rice to the skillet and break up any clumps using a spatula. Stir-fry for about 3-4 minutes to incorporate all the ingredients evenly.
  • Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice. Toss everything together to coat the rice and vegetables with the sauces. Continue stir-frying for another 2-3 minutes. Add in the scrambled eggs and mix again.
  • Season with salt and pepper to taste.
  • Once the fried rice is heated through and well combined, remove it from the heat.
  • Serve the Panda Express-style fried rice hot as a side dish or as a main course with your favorite Asian-inspired dishes.
