Moe's Queso Copycat Recipe

Ingredients
 
 

  • 8 oz white American cheese cubed
  • 3/4 cup half and half
  • 1 oz Monterey jack cheese shredded
  • 1 oz white cheddar cheese shredded
  • 2 oz green chiles about half a small can
  • 3 slices pickled jalapenos chopped
  • 1 tablespoons pickled jalapeno brine
  • 1/4 teaspoons salt to taste
  • 1/4 teaspoon ground cumin

Instructions
 

  • Fill a saucepan with about 2-3 inches of water and place over medium heat. Once the water is steamy place a mixing bowl over the saucepan. You want the bowl and the water to not touch. If they do, remove a little bit of the water.
  • Add the cubed white cheese and the half and half and stir until completely melted and the cheese is incorporated into the half and half.
    8 oz white American cheese, 3/4 cup half and half
  • Add in the shredded Monterey Jack cheese and the white cheddar. and stir again until everything is combined and smooth.
    1 oz Monterey jack cheese, 1 oz white cheddar cheese
  • Stir in the green chiles, chopped pickled jalapenos, jalapeno brine, salt, and cumin, and stir again to combine.
    2 oz green chiles, 3 slices pickled jalapenos, 1 tablespoons pickled jalapeno brine, 1/4 teaspoons salt, 1/4 teaspoon ground cumin
  • Serve the queso warm with tortilla chips or your favorite dipping items.
