In a large mixing whisk the granualted sugar, eggs, milk, oil, and vanilla extract until combined.
Add in the dry ingredients and whisk jus tuntilcombined (Don't overmix.)
Preheat a griddle, non stick pan, or cat iron over medium heat. Grease with a little butter then add about 1/4 cup of batter and cook 2 minutes or until bubbles start to appear at the top of the pancake.
Flip the pancake and cook for another 2 minutes. Serve immediately or transfer to a large plate for later. Top with maple syrup or fresh fruits.
