For the Chicken Marinade:
- 2 lbs boneless skinless chicken thighs
- 1/4 cup plain yogurt
- 2 tablespoons olive oil
- 5 cloves garlic minced
- 1 tablespoon fresh oregano chopped
- 3 tablespoon lemon juice
- 1 teaspoon ground cumin
- 2 teaspoon ground smoked paprika use regular if you don't like smoked paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/8 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper adjust based on how spicy you want the chicken to be
- Salt and pepper to taste
For the White Sauce:
- 1/3 cup mayonnaise
- 1/4 cup plain yogurt
- 1/2 tablespoon lemon juice
- 1 teaspoon white vinegar
- 1/2 teaspoon white sugar
- 1/2 teaspoon black pepper to taste
- 1/4 teaspoon salt to taste
- water to thin it out use 1/2 teaspoon at a time depending on your preference.
Rice
- 2 cups long-grain basmati white rice
- 3 & 1/2 cups chicken broth Adjust the liquid amount based on the brand of rice you use for 2 cups of dry rice.
- 2 tablespoon butter or ghee
- Salt to taste
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
Serve with iceberg lettuce, tomato pieces, pita bread, and a drizzle of harissa style hot sauce.
