Ingredients
 
 

For the Chicken Marinade:

  • 2 lbs boneless skinless chicken thighs
  • 1/4 cup plain yogurt
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 1 tablespoon fresh oregano chopped
  • 3 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 2 teaspoon ground smoked paprika use regular if you don't like smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper adjust based on how spicy you want the chicken to be
  • Salt and pepper to taste

For the White Sauce:

  • 1/3 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1/2 tablespoon lemon juice
  • 1 teaspoon white vinegar
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon black pepper to taste
  • 1/4 teaspoon salt to taste
  • water to thin it out use 1/2 teaspoon at a time depending on your preference.

Rice

  • 2 cups long-grain basmati white rice
  • 3 & 1/2 cups chicken broth Adjust the liquid amount based on the brand of rice you use for 2 cups of dry rice.
  • 2 tablespoon butter or ghee
  • Salt to taste
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin

Serve with iceberg lettuce, tomato pieces, pita bread, and a drizzle of harissa style hot sauce.

Instructions
 

Halah Guys Chicken

  • In a bowl, mix all the ingredients for the chicken marinade until well combined. Add chicken pieces to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.

  • Preheat a drizzle of oil on a grill pan over medium-high heat. Add the chicken and cook without disrupting for about 4-5 minutes or until they are lightly browned. Flip the chicken and reduce the heat to medium. Cook for about 5-6 minutes longer or until cooked through and the internal temperature of at the center or the chicken tighs registers 165F. Remove from heat and let it rest.
  • Chop up the grilled chicken before serving on a bed of rice.

Halal Guys White Sauce

  • For the white sauce, whisk together all the white sauce ingredients until smooth. Adjust seasoning to taste.
    1/3 cup mayonnaise, 1/4 cup plain yogurt, 1/2 tablespoon lemon juice, 1 teaspoon white vinegar, 1/2 teaspoon white sugar, 1/2 teaspoon black pepper, 1/4 teaspoon salt, water to thin it out
  • Wrap with plastic and chill in the fridge for later.

Halal Guys Rice:

  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch for fluffier rice.
    2 cups long-grain basmati white rice
  • In a medium saucepan, melt the butter or ghee then add in the rice and toast for a few minutes. Add in the turmeric, cumin, salt, and the chicken broth. Mix well to combine everything then bring to a boil. Reduce the heat to a simmer, cover with a lid and cook for 15-20 minutes.
    3 & 1/2 cups chicken broth, 2 tablespoon butter, Salt to taste, 1/4 teaspoon ground turmeric, 1/4 teaspoon ground cumin
  • Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam. Fluff with a fork and use in your Halal bowl.

Assembly:

  • Serve the chopped-up grilled chicken over a bed of cooked rice.
  • Garnish with chopped lettuce, diced tomatoes, and thinly sliced onions if desired.
  • Drizzle the white sauce generously over the chicken, veggies, and rice. Add some harissa-style hot sauce if desired.
  • Serve immediately with additional white sauce on the side and enjoy!
