2tablespoonssimple syrupadjust according to your sweetness preference

Brew a cup of strong coffee and let it cool to room temperature then pour it into your ice cube tray and allow it to freeze until solid for a few hours. I like to do this the night before.
1 cup strong brewed coffee
In a blender, combine the frozen coffee, half and half, xanthin gum, and simple syrup and blend until smooth and with a slushy consistency.
1/2 cup half and half, 2 tablespoons simple syrup, 1/4 teaspoon xanthan gum
Taste the frozen coffee and adjust the sweetness or thickness by adding more simple syrup or ice if needed. Blend again as necessary.
Pour the frozen coffee into a glass and top with whipped cream and caramel or chocolate syrup.
