Pour the wet ingredients into the dry ingredients and stir until just combined; don't overmix.
Let the batter rest for 5 minutes while you heat up your griddle over medium heat.
Lightly grease the skillet, then pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
Flip the pancake and cook for another 2 minutes or until golden brown.
