  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups buttermilk
  • 1 egg
  • 3 tablespoons butter melted
  • 1 teaspoon vanilla extract optional, for extra flavor

Instructions
 

  • In a large bowl, mix flour, baking powder, baking soda, salt, and sugar.

  • Pour the wet ingredients into the dry ingredients and stir until just combined; don't overmix.

  • Lightly grease the skillet, then pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  • Flip the pancake and cook for another 2 minutes or until golden brown.
  • Serve warm with desired toppings.
