Scroll down to the recipe card at the bottom of the page for the detailed ingredient measurements.

    • Butter: Use unsalted butter so that we can control how much salt goes in later on.
    • All-purpose Flour: is used to make the soup feel thicker.
    • Half-and-Half: provides the perfect texture and delicious mouthfeel.
    • Chicken Broth: is the base of the soup and has the most classic flavor. But feel free to use whatever broth you'd like.
    • Onion and Garlic: provide savory flavors that infuse with the cheese. You will need to chop the onion and mince the garlic.
    • Nutmeg: brings a tasty, spiced flavor.
    • Cayenne Pepper and Black Pepper: add a little heat to the delicious soup.
    • Salt: Add slowly and stir. Adjust the amount to your personal taste.
    • Broccoli: Chop the broccoli into small florets for the recipe. You can use fresh broccoli or thawed from frozen broccoli.
    • Carrots and Celery: add a fresh and wholesome flavor to the homemade broccoli cheese soup. You will need to shred the carrots and dice the celery.
    • Velveeta Cheese: is the star of the show that gives that rich cheesy flavor.
    • Parmesan and Sharp Cheddar Cheese: bring a real cheese flavor to the soup. You can use medium cheddar or mild cheddar cheese if you prefer.

How to Make this Velveeta Broccoli Cheese Soup Recipe

Make sure to scroll down to the recipe card at the end of this post for the full step-by-step instructions.

    1. In a large pot, melt the butter over medium heat. Add the chopped yellow onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
    2. Sprinkle the flour, nutmeg, cayenne pepper, salt, and pepper over the onion and garlic, and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.
    3. Gradually whisk in the half-and-half and chicken stock, stirring constantly to prevent lumps from forming.
    4. Add the chopped broccoli florets, carrots, and celery to the pot. Bring the soup to a simmer and cook for 15-20 minutes, or until the broccoli is tender.
    5. Reduce the heat to low and add the cubed Velveeta cheese, stirring until melted and smooth.
    6. Add the shredded cheddar cheese and grated Parmesan cheese, stirring until melted and well combined.
    7. Taste the soup and adjust seasoning as needed.
    8. Serve the soup hot, garnished with croutons if desired.

    Frequently Asked Questions - FAQ

How Can I Make this Velveeta Broccoli Cheese Soup Recipe Vegetarian?

If you don't eat products made from meat, you can still enjoy this soup. All you'll need to do is use vegetable broth instead of chicken. The rest of the ingredients work within that diet.

How to Store Leftover Pot of Soup

To store this cheesy soup, simply put it in an airtight container and store it in the fridge. It will last for 3 or 4 days.

    Can I Freeze this Soup?

Absolutely! Making a big batch of this soup and storing multiple meals worth is the way to go! If you're willing to store away multiple containers, you can just pour the room temperature soup into them and stack them in the freezer.

What I personally use are these silicone soup mold freezer trays. They allow you to freeze the soup into a shape, easily pop them out the next day, or put them in a large Ziplock bag. Very convenient method for big families or people who just like to meal prep.

How to Properly Reheat this Velveeta Broccoli Cheese Soup Recipe

Because the soup is on the thicker side, it will take a bit to heat back up from storage. If using a pot on the stove, simply put the burner on medium heat and wait for it to slightly boil or until you see bubbles. Then stir consistently to move the heat around and prevent the bottom from burning. If the soup is too thick add a splash of water to get it back to your desired consistency.

If using a microwave, make sure the sealed lid is off of the container and you have a damp, paper towel on top. Heat for 1 minute then stir the soup in the container. Re-heat for as many more 30 second intervals as it needs as you continue to stir in between each one.

Can I Use Frozen Vegetables Instead of Fresh?

The beauty about soup is that once the veggies are boiled, their texture will be the same regardless of if they were fresh or frozen. A lot of people think that fresh vegetables are better than frozen but frozen can be even fresher due to the fact that they're usually flash frozen as soon as they're harvested.

What Flavor Variations Can I Try?

    • Add potatoes to fill you up and make it even more satisfying during the colder winter months.
    • Make it spicy by adding dried chilis, red pepper flakes, or jalapenos.
    • Add protein by adding in pieces of shredded chicken, meatballs, or sliced sausage.
