    Cook Aromatics:

    1. Heat olive oil in a cast iron skillet over medium heat.
    2. Add the white onion and cook until translucent. This will take a few minutes. Add in the minced garlic and cook for another 1 minute.

    1. Stir in thawed and drained spinach, cubed white American cheese, jack cheese, half-and-half, and chopped green chilies.

    • 1/4 cup diced white onion
    • 10 oz package frozen chopped spinach thawed and drained
    • 14 oz white American cheese cubed
    • 1/2 cup Jack cheese grated
    • 1/2 cup half-and-half or whole milk
    • 4.5 oz can chopped green chilies drained
    • 1/4 teaspoon ground cumin
    • Salt and pepper to taste
